Keto Chicken Tighs With Mushrooms Sauce

These boneless, skinless chicken thighs with mushroom sauce are an easy, quick, and deliciously creamy keto recipe, and it's all done in a pan.

INGREDIENTS

Chicken thighs

  • 750 g boneless skinless chicken thighs about 5-6 fillets
  • 1 fresh lemon juice
  • 2 cloves of garlic, minced
  • 1 C. 1 tsp dried thyme
  • 1 C. 1 tsp rosemary
  • 1 teaspoon of salt
  • 1/2 teaspoon crushed black pepper
  • 2 tablespoons olive oil

Creamy mushroom sauce

  • 1 tablespoon olive oil
  • 250 g sliced ​​fresh mushrooms
  • 2 cloves of garlic, minced
  • 1 C. 1 tsp fresh chopped parsley
  • 1 C. 1 tsp dried thyme
  • 1 C. 1 tsp dried rosemary
  • 1 cup heavy cream
  • 1 teaspoon nutmeg
  • salt and black pepper
  • 1/2 cup grated fresh parmesan

INSTRUCTIONS

Chicken thighs

  1. Pat the chicken thighs dry with a paper towel and cut off the excess fat. Season the chicken thighs with lemon juice salt. Let it absorb the lemon juice for 15 minutes.
  2. Mix the garlic cloves, thyme, rosemary and pepper.
  3. Coat chicken evenly with combined seasoning.
  4. Heat 1 tablespoon oil in a large skillet or skillet over medium-high heat and sear the chicken thighs in batches until golden on each side and no longer pink in the center (about 8 minutes on each side, depending on the thickness).
  5. Transfer to a plate; set aside and keep warm.

Creamy mushroom sauce

  1. In the same pan or frying pan, put the olive oil and add the mushrooms. Season with salt and pepper and cook until tender (about 3 minutes).
  2. Add garlic, parsley, thyme and rosemary; sauté until fragrant (about 1 minute).
  3. Add the heavy cream, bring to a boil, then reduce the heat and continue cooking until the sauce thickens slightly. Add the nutmeg. Stir in the Parmesan and let it melt in the sauce for an additional 4 minutes, stirring occasionally.
  4. Return the chicken to the pan. Test the taste and season with salt and pepper to your taste. Garnish with fresh parsley and parmesan. Serve immediately.
